roasted parsnips & carrots...


until recently...i don't think i ever ate a parsnip.  my intrigue with them started when i saw them prepared on the food network one morning.  but first...i had to FIND some parsnips.  



i checked at the farmer's market.  nope.  i checked at trader joe's.  nada.  then...there they were...at my local safeway.  i bought a few. 


they're super simple to make.  i've listed the ingredients below...
  • parsnips
  • carrots
  • olive oil
  • honey
  • kosher salt
  • pepper (black & red pepper flakes)
  • thyme
i semi-followed the recipe that i found on the food network website (i also added some crushed red pepper flakes and cooked mine about 45 minutes total).
