baked kale chips...

Adapted from smitten kitchen's recipe

1 bunch (about 6 ounces) kale
1 tablespoon seasoned olive oil
Kosher salt, to taste

Preheat oven to 300°F. Rinse and dry the kale, then remove the stems and tough center ribs. Cut into large pieces, toss with olive oil in a bowl then sprinkle with salt. Arrange leaves in a single layer on a large baking sheet. Bake for 20 minutes, or until crisp. Place baking sheet on a rack to cool.

parsley, dill, lemon zest, kosher salt, walnuts
baked for 15 minutes at 400 degrees

today was my first full day back in cali...
after being in ny for two weeks.

two things i noticed about being with my daughter in ny...
i ate healthier (not as much junk food)...
and i walked more.

as a matter of fact...
i lost 8 pounds.

i could tell i'd lost weight...
because my skirt and jeans were baggy...
and i HAD to wear a belt...
or sag.

i chose the former. :)

in keeping with my healthy eating...
my dinner consisted of baked fish...
roasted veggies...
iced tea...
and greek yogurt for dessert.
